Basil Chicken Salad Pitas

Do you ever make a few good meals in one week and just get so proud of yourself? LOL That’s how I feel tonight- not that any of them were above beginner level!

Last week while at my Mom’s house we looked through her cooking magazines together and I drew inspiration for my weekly menu.  Tonight I made Basil Chicken Salad Pitas, they were delicious!!  I also steamed some veggies as the side dish.

Basil Chicken Pita

Ingredients:

  • 2 T Basil
  • 2 Medium Chicken Breasts
  • 1/2 Red Bell Pepper
  • 4 Celery Sticks
  • 3 T Mayonnaise or Dressing
  • 1 T Onion Powder
  • Pita Pockets
  • Shredded Lettuce
  • 1 Roma Tomato
  • Salt and Pepper
  • Sriracha (optional)

Directions:

Boil the chicken and shred it.  While it is boiling, finely chop the basil, then chop your bell pepper, celery sticks, and tomato.  In a medium bowl, mix all of the ingredients except for the shredded lettuce and refrigerate for at least an hour.  Serve in pitas with lettuce and if you’re like me,  top with Sriracha (or your favorite hot sauce).  It is a great summer meal that will fill you up but keep you cool! Serves 2-3
