They say it can’t be done, well they are wrong!
I found a clean recipe for turkey chili on Pinterest today and I added my own twist and omitted some of the original ingredients. It made for a perfect dinner on a cold night!
1 tbsp olive oil
1 large red onion, chopped
1 large green bell pepper, chopped
6 cloves garlic, diced
1 1/2 lbs. lean ground turkey meat
3 tbsp. ground cumin
1 tsp. ground herbs de provence
1 tbsp. cayenne pepper
3 cups fresh tomatoes, diced
1 vegetable bouillon cube, dissolved in 1 cup of water
1 (6 oz.) can of tomato paste
1 (15 oz.) can kidney beans
1 (15 oz.) can tomato sauce, no sugar added (optional)
A pinch of salt and pepper
Begin by prepping all of your vegetables and the water. The bouillon will not dissolve in room temperature water unless it is a packet!
In a large soup pot, sauté the red onion, bell pepper, garlic cloves, salt and pepper in the oil. When the onions are translucent, add the turkey. When the turkey is fully cooked, add the cumin, herbs and cayenne. Pour in the bouillon water, tomatoes, paste and beans. Bring to a boil and add the tomato sauce. Cover and let simmer for at least 1 hour. You can simmer longer if you would like to.
You can also make this in the crock pot- same recipe just heat on low for 6-8 hours.
I added a dollop of sour cream and a little cheese because I already had them in my fridge and the frugal person inside me will NOT let them be thrown away. That part is not very clean
This will serve 4-6 big bowls!
